Sweet Potato Nacho Soup with Lime Goat Cheese Swirl

Ingredients

  • 113 g Woolwich Dairy Original Soft Fresh Goat Cheese log
  • 4 cups vegetable broth
  • 1 large sweet potato, roughly chopped
  • 1 carrot, roughly chopped
  • 1 apple, cored and diced
  • 1 onion, diced
  • 2 tbsp extra virgin olive oil
  • 2 tsp Sriracha, or to taste
  • 2 tsp lime juice
  • salt, to taste

Lime Goat Cheese Swirl

  • 113 g Woolwich Dairy Original Soft Fresh Goat Cheese log
  • 2 tbsp lime juice

Garnishes

  • Pumpkin seeds, to garnish
  • Chipotle powder, to garnish

Directions

  1. In a large pot, combine all soup ingredients except Woolwich Dairy goat cheese. Bring to a boil, reduce to a simmer, cover and cook until vegetables are tender, about 25 minutes. Remove from heat and stir in goat cheese. Using an immersion blender or in a blender, puree soup until smooth.
  2. While soup is cooking, make the lime goat cheese swirl by whisking goat cheese with lime juice until fully combined. Transfer to a plastic squeeze bottle or zip top bag (seal and slice tip of zip top bag).
  3. Ladle into small serving cups or bowls and drizzle with swirl. Garnish with pumpkin seeds and chipotle powder.
